The basis of Gintage is to produce spirits that are virtuous in environmental, economic and social terms, as they are produced by recycling: each recipe sublimates a local 'seasonal food waste'. This committed brand not only focuses on recycling, but also on highlighting local players and their know-how in order to showcase the Languedoc region. Kalopsia - Limited Edition 2023 - is Zoé Schroeder's first partnership with Moulin de la Garrigue (an olive mill in Saint-André de Sangonis, 34) to use olive pomace, the product of crushing olives to extract oil. Generally regarded as a waste product, olive pomace has many unsuspected qualities. Macerated in a wine-based alcohol, they reveal their full value, giving this artisan gin a fruity olive aroma and a beautiful amber colour that is unusual for a gin that has not been aged in barrels.
This gin is distilled and bottled by the Distillerie du Renard in Gignac (34) from neutral wine alcohol (already recycled from winegrowing by-products), juniper berries and a few other botanicals.
Note the name of this cuvée, Kalopsia. The name comes from the Greek: the illusion of things being more beautiful than they really are. The bottle and the recipe are Zoé's interpretation: "to show that you can make something beautiful out of what you consider to be waste, ugly and useless".
It's a truly Languedoc product, handcrafted and imbued with its terroir, in a 100% recycled glass bottle, hand-sealed on a magnificent wooden screw cap that hides beneath the blue eco-tex fabric hood (made by Arnal Tissu in Clermont-l'Hérault), with a recycled paper label printed in Clermont-l'Hérault (34).

The deep amber colour is very appealing. Very soft on the nose, the warm aromas of juniper, toasted cereals and undergrowth develop in stages. Round on the palate, this gin has notes of saffron, frangipane and sweet ripe olives, without astringency or bitterness. Sweet spices, cardamom, elderflower and pepper gently lengthen the finish. The palate is complex, developing to a crescendo. Beautiful concentration and long-lasting balance, with no sensation of alcoholic heat. Splendid!
