In the world of spirits, independent producers and bottlers are increasingly offering rums aged or finished in old Jerez casks. It was this new trend that convinced the historic Andalusian Bodega Williams & Humbert to embark on the adventure. Thus was born the Dos Maderas brand, which can literally be translated from Spanish as "two woods". This meaning has a very special significance that we will explain later on when we talk about the two aging times of this rum.
Williams & Humbert imports rums from Barbados, double distilled in an iron still, and from British Guiana (Guyana), distilled once in a column still.
Dos Maderas Triple Aged 5+5 owes its unique personality to its blend of molasses rums produced in Barbados and British Guiana, so it is a traditional English rum.
But it is above all unique because of its very original ageing process: first of all it was aged for 5 years in American oak barrels in the tropical climate of the Caribbean, and then it was aged for a further 5 years in Spain. These 5 years of ageing in Andalusia take place at Bodega Williams & Humbert: 3 years in ex-Palo Cortado casks ("Dos Cortados", a 20 year old Palo Cortado) and 2 years in ex-Pedro Ximénez casks ("Don Guido", a 20 year old solera especial de PX). It is aged in three stages: 5 + 3 + 2. In total, the rum will have aged 5 years on each side of the Atlantic.
Tasting notes:
Nose: warm and comforting. Sweet scents of prune and fig.
Palate: a real explosion of flavours. Powerful, fat and sweet rum. Intense attack and faithful to the notes of the Caribbean rums of the nose. Beautiful fruity notes of flambéed banana and ripe fig then mingle with the strength of the spices (cloves and cinnamon). A rich and tasty evolution in the mouth.
Finish: unique aromatic spectrum, between sweetness, spices (Caribbean breeding) and fruits associated with mocha (maturing in ex-Jerez casks including the aromatic Pedro Ximenez).
