This almost pure Syrah comes from a parcel of schist and granitic arena at an altitude of 600m in the Roussillon.

          

"In the autumn of 1997, I spent long days wandering the wild terroirs of the Agly Valley. One midsummer day, at the bend in a dirt road, I remember bathing in the dark water of an abandoned quarry, then entering a lost valley where huge blocks of granite emerged from a grey sand spangled with gold. In front of me, in the distance, an immense hillside, facing south, at an altitude of 600 m. As I slowly approached, in the centre of the majestic plot that seemed to climb to the sky, a Syrah vine literally dazzled me, weaving a powerful bond between us in an instant. I thought then, even though I am not an aficionado, of the heartache that the Torero must feel when the Toro enters the arena... my heart stopped. Ten years later, in memory of this unique moment, of this emotion still alive, I chose to call this singular wine, long, tense, scented with violets, Moluccan pepper and truffles, with subtle fruit and intact freshness, an unusual name.     Hervé Bizeul

Tasting notes:

This high altitude Syrah expresses all the elegance of this grape variety: raspberry, black pepper, lardy notes, violet, liquorice... Intense, whole, luminous fruitiness meets powdery, racy tannins. A wine of untamed and pure energy.

Powerful and elegant red wine.

Food and wine pairing :

Grilled fillet of duck with vine shoots and spicy glazed vegetables. Braised rib of beef, winegrower's sauce, sautéed potatoes.
