Tasting Notes:
The color is hardly translucent, a dark purple rather purplish. The nose brings out black fruits (cherries, blackberry cream) but also a pinch of cocoa. The palate is round, full-bodied, with a dense and velvety texture and a tension on "schists". The finish is firm, with ripe tannins. We always stay on the cherry before going through the pepper to finish on the cocoa.

Full-bodied red wine for keeping.

Salers prime rib marinated in grenache and grenailles sautéed with wild pepper. Wild boar stew with olives.
