It is a traditional orange wine that Daniel decided to produce from a few bunches of white Carignan from his oldest vine. It is his smallest production, a confidential wine.
Vinification:
Whole harvest, alcoholic and malolactic fermentation in vats, maceration for 6 weeks.
Breeding :
For a year in an amphora then placed in old barrels for a second year.
Grape varieties:
100% white carignan (schists, sandstone, argillites); yields of 20 hl / ha.
Tasting Notes:
The color is orange, luminous and shiny. A fairly dense wine, with a strong palate. Lots of peach, orange and hazelnut skin notes. The wine has a full bodied feel and is quite tannic, especially when served cold.
Wine style:
Maceration white wine.
Food and wine :
Langoustine tartare with citrus fruits and dill. Arctic char cooked at low temperature and caraway white butter.
