Mémé Jeanne is a dry white wine, from the Petit Manseng variety, vinified as a red, macerated with the skin of the berries. Vatting for 3 to 4 weeks in concrete vats with submerged marc cap. Fermentation exclusively with indigenous yeasts. The wine is then aged for 15 months in stainless steel vats.

100% small manseng.
Tasting Notes:
A gold color with copper highlights. Complex aromas of dried fruits, conifers and sweet spices. Slightly tannic in the mouth but without heaviness, a very long finish.

Monkfish fillet and saffron risotto, crustacean sauce. Monkfish papillote with bacon and black garlic, celery mousseline with dried fruits.
