From its first brandy launched on the French market in 2011 (a young single malt barely a year old), Domaine des Hautes Glaces was able to distinguish itself from other whisky houses by distilling entirely from organically grown barley harvested on a specific climate on the estate.
Relying on the know-how, techniques and tools (two Charentais stills) of Cognac, Frederic Revol has created a unique and very French version of the most Scottish of spirits.
With a lot of character and precision, this version highlights particularly well the work accomplished for more than ten years by the Domaine des Hautes Glaces.
Thus, note after note, its aromatic and gustatory palette restores the herbaceous nuances of a barley field, those more brioche of a malting area or those more greedy of a pastry. Without forgetting the very nice oxidative influence of the Jura yellow wine.
Tasting note:
Nose: fine, racy. At first nose, scents of malting barley, toasted bread and roasted nuts invade the atmosphere. With aeration, the nose becomes more spicy (clove, pepper) and even more pastry-like (gingerbread, porridge). As it goes on, exotic fruits (banana, pineapple) and heather honey take possession of the place.
Appearance : deep old gold
Palate : clear, lively. Marked by notes of chocolate with hazelnuts, peanuts and nutmeg, the attack in mouth evolves on elegant autumnal tones (chestnut, marron). In the mid-palate, balsamic flavors (cough drops, thuja) are combined with powdered spices (curry, turmeric, ginger). The influence of the yellow wine barrel is felt at this point. The aftertaste is freshly herbaceous (barley field) and saline.
Finish: long, greedy. The beginning of the finish is an invitation to taste different pastries (Paris-Brest, chocolate éclair, hazelnut cake). The very end of the mouth oscillates between the same exotic fruits as in the nose and dried fruits (date, fig). Green (cut hay), vinous (bunch of savagnin), the retroolfaction reveals a beautiful liquor at the same time acidulous (lemon, grapefruit) and vanilla. The empty glass evokes the scents of cereals that escape from a vat in full fermentation.
