In the historic heart of Montpellier's city centre in the Ecuson district, Martial the Rhum specialist opened a restaurant Le Jolly Rouge dedicated to Caribbean cuisine with spicy and sunny flavours.

As soon as the sun goes down, there is a relaxed and joyful atmosphere around a punch.

On the slates of the day, the chef offers canaille dishes, some colourful plates and the classic chicken scapegoat with three sauces.

Among the bottles to taste on the wine list, the carignena, an assemblage of carignan and garnish by Jérôme Estève to Peyrac-sur-mer facing the pond of Bages.

A red wine with ripe fruit aromas, with violet notes to finish on sweet spices.
