Here are some tips to best give these must-see parties.
You love cooking and receiving your friends around your table.
But you don't know much about wines and are tired of not making the right deals?
Looking for the best wines with your dishes, without buying too expensive wines?
In this article, I condensed my best food and wine chords to help you make the right choices.
BIG AND BIG, A CLASSIC!
The most common association remains a soft white wine, sweet and fruity sauternes or Coteaux du Layon whose aromas will enhance the consistency of this met, its texture and its sweetness. Among the other liquorous and mellow that ideally associate with foie gras, we find Bergerac, the Côtes de Gascogne, jurançon or the Gaillac but also the wines from Alsace such as Pinot gris or Gewurztraminer.
- Château de Plaisance 1er Cru chaume 2018 (Coteaux du Layon 1er cru Chaume AOP)
- Domaine Cauhapé Noblesse du Temps 2015 (Jurançon AOP)
- Van Volxem Bockstein Riesling Spätlese 2018 (Germany)
- Tarapaca Late Harvest 2019 (Chile)
Some believe that foie gras must be associated with a soft white or other sweet wine. The problem is that your taste buds are very likely to be overloaded. Thus, you will have many divine flavors that will shock in the mouth, and the risk is that you will not appreciate these dishes at their fair value.
We advise you to choose a little tannic red wine. Here are our wine choices for your enjoyment:
- Domaine Marcel Deiss Alsace red 2018 (Alsace AOP)
- Jeff Carrel The Grenadines 2019 (Côtes Catalanes IGP)
- Sottimano Maté 2020 (Italy)
Last possible and equally original association, foie gras and champagne. The choice of champagne should be based on the type of foie gras. With foie gras, for example, it is advisable to prefer a fresh and light champagne. On the contrary, a duck foie gras will perfectly match with a more powerful champagne.
- Frerejean Brothers First Cru Extra Brut (Champagne 1st cru AOP)
- Adrien Renoir Les Epinettes Grand cru Pinot Noir 2016 (Champagne Grand Cru AOP)
- Drappier Grande Sendrée 2010 (Champagne AOP)
- The Persian Highlands (Crémant de Limoux rosé)

WHAT WAS THE AGREEMENT BETWEEN WINE AND OUISTER?
This is iodized, with the texture so special must find the perfect fit to be sublimated. What is the perfect agreement between wine and oyster ?

- Nanclares y Pietro. Time Vivendi 2019 (Spain, Rias Baixas DO)

WHAT WINE FOR FUMED SALMON?
Salmon will very often be present at party meals! A quality choice for a successful meal. A choice of fat dishes also, and you should choose a wine to compensate for its fat side. Promote a dry and lively white wine with little acidity. Burgundy, among others, will do well at this stage of the meal:
- Château de Béru Terroirs de Béru 2018 (Chablis AOP)
- Château de Fuissé 2018 (Saint Véran AOP)
- Château de Mérande His Highness 2019 (Rossette de Savoie AOP)

WHAT WELL WITH THE NOEL DINDE ?
Turkey meat, with firm flesh, can sometimes leave a dry sensation in the mouth. We must therefore a wine that brings flexibility and freshness, with a nice length and amplitude in mouth.
- Domaine Henri Rebourseau Gevrey-Chambertin 2016 (Gevrey Chambertin AOP)
- F. Becker Spätburgunder 2016 (Germany)
- Domaine des Pothiers No. 6 2020 (Roannais coast PDO)

WHAT WINE FOR THE CANARD AND THE PIGEON?
To taste your duck or pigeon at best, we recommend a red wine, powerful and spicy, smoky and tannic.
- Château Fleur La Mothe 2016 (Médoc AOP)
- Château Lagrézette Lady Honor 2004 (Outside AOP)
- G.D. Vajra Albe 2015 (Italy, Barolo DOCG)

WHAT WINE FOR CRABE, LANGUEST, LANGOUSTINES, HOMARD?
When the good meal arrives, the master lobster, the tasty lobster and the divine lobsters, let's look for the aromas! Their texture, so special, so fine, deserves to be associated with a white wine of character and very aromatic:
- Th. Poirier Puligny-Montrachet 2019 1st Cru Les Pucelles ( Puligny-Montrachet 1st cru AOP)
- N. Badel Condrieu 2018 (Condrieu AOP)
- Movia Exto Gredič 2018 (Slovenia, Brda ZGP)
