From time to time I am very happy to surprise my guests at the aperitif, for the occasion I open a bottle of natural sweet wine, a Muscat of Frontignan.

Close to the town of Sète between sea and garrigue, the castle of La Peyrade is one of the references of the appellation.

Small-grained muscats are sunbathed on limestone soils and cool on the night of sea entrances.
The Pastourel family produces an array of bright muscats.

I opted for the cuvée "Sol Invictus" with pale yellow dress and green reflections, a beautiful shine.
There is a nose of citrus and exotic fruits, delicate and crisp in the mouth, it ends with aromas of lemon.

It causes the taste buds!
I serve it on shrimp tartar and avocado verrines or on a watermelon and cucumber salad in summer.
