CHATEAU LA FONT DES ORMES
In Caux, in the terroir of Pézenas, in Languedoc, the Font des Ormes lives in a valley lined with two basalt flows.
Purchased in 2002 by Guy Cazalis de Fondouce and his wife Jane of major works are undertaken on the property for 10 years.
At first the renovation of the buildings to regain all the charm and the Languedoc style of the building, patient restoration work led with architect Ariel Balmassière and local craftsmen like Serge Ivorra for woodwork.
Then, in a second stage, the restructuring of the vineyard with plots of vines intended for high yields. Once separated from this vineyard, they buy a 20-hectare ilot of only one holding on a hill which is a lava flow, one of the two lava flows of the volcano of the Baume in Nefies.
For 3 of the old 17th century stone vats that were on fairly large volumes not adapted in volume to their current production Guy and Jane of heritage lovers, who could not imagine destroying these magnificent witnesses of history, have chosen to form from these four vats a single large vats which now have the ideal characteristics of a cellar to raise their wines in barrels.

For the production part of concrete tanks in uncoated truncated forms (no epoxy coating) in relation to their commitment to organic and biodynamic farming are used.
The soils of the Font des Ormes, with their rare mixture of limestone and basalt, form the basis of the wine style of the estate.
Basaltic soil on and below Miocene limestone, a limestone shelled with marine fossils. Double benefits of the concentration of basalt that will bring generosity on the wines, minerality and limestone that will bring depth and freshness.
Of the 20 hectares of vines of which 10 hectares are in AOC Pézenas their ambition is to reflect in their wines in organic agriculture, the elegant and serene energy of the landscape with their commitment and choice of biodynamics to achieve balance with their natural environment, activate the life of the soils and strengthen their vineyards.
Over the years, thanks to the work done to restore soil life, these characters go by asserting. And the shift to biodynamics now reinforces this evolution.

Fresh, very expressive aromas of citrus, verbena and eucalyptus perfectly balance a full and round palate.
Very nice nose with aromas of redcurrant and red fruits. Fresh, supple and greedy on the palate.
