Villa Tempora is located in the Protected Designation of Origin area "Languedoc-Pézenas"
Originally from Bordeaux and Burgundy, Agathe Dalisson and Amaury Coste met in Kabul, Afghanistan, but it was in Languedoc, in Pézenas, that they decided to put down their bags to live to the rhythm of nature, of the vines and wine.
Their vineyard is spread over several plots around the villages of Pézenas, Caux, Gabian and Néffiès, on the first foothills of the southern Cévennes which benefit from a great diversity of soils (clay-limestone, schist, grave villafranchiens, basalts), 'exhibitions and grape varieties. Preserving ecosystems (hedges, groves, embankments, etc.) helps protect biodiversity and stimulates the natural defenses of the vine.
A lot of care and requirement are taken in the cultivation of the vines (organic methods, Ecocert certified estate since 2011) with constant respect for the environment and the land, without chemicals or insecticides. The use of natural organic fertilizers, mechanical weeding and manual disbudding make it possible to limit yields and obtain perfect sanitary conditions with concentrated fruits of good maturity.
The harvest is manual, with phenolic maturity. Here, preference is given to slow infusion rather than too heavy an extraction. The aging is gentle, in vats, in barrels (Burgundian pieces or demi-muids of several wines and, recently, in sandstone amphorae) in order to express the freshness, finesse and typicity of the different terroirs. This is how the midday sun and the freshness of the north winds are found in their wines.
