The vines are located on the foothills of the Montagne Noire, in an isolated valley, a marvelous setting of greenery and preserved biodiversity, near the village of Siran. On this exceptional terroir, Patrick Moderc manages his vines manually, without tractor, without irrigation, as naturally as possible with permanent spontaneous grassing.
Installed in an old cellar from 1907, Patrick makes his wines there in an artisanal way.

Grape varieties:

Mourvèdre, grenache noir, carignan

Tasting Notes:

Envol is a terroir cuvée, a minervois full of power and finesse. The nose is very open, with intense notes of blackcurrant, blackberry and spices. The palate does not present any heaviness, marked by a fruity liveliness and notes of black pepper. It stretches for a long time, carried by a fresh tannic structure that will keep this wine well.

Elegant and fruity red wine.

Leg of lamb on a spit, Provencal marinade, pimientos del padron. Grilled black pork chop with branches and parmesan eggplant
