Bio

The jewel of the estate, Clos Béru is the emblematic wine of Château de Béru.
It comes from a vineyard situated at an altitude of 300 m, planted around the château on an outcrop of Kimmeridgian limestone bedrock and surrounded by an enclosed wall several hundred years old.
A long ageing period of 18 months in demi-muids, then a year in foudre and 6 months in bottle is necessary to tame the crazy intensity of this powerful, mineral and complex wine.  
Planted at the end of the 1980s on this predominantly limestone terroir, the vines are of several varieties, the main one being 41B, a delicate but very qualitative rootstock. The planting density is 6500 vines per hectare. Rigorous pruning and extensive green harvesting maintain a modest yield, which varies from 35 to 45 hectolitres per hectare depending on the vintage. The harvest is naturally manual and the grapes are carefully sorted.

In this vintage, the freshness, minerality and persistence make this Clos Béru Monopole a superb cuvée. We find this particular taste of gunflint and iodized limestone. The combination of minerality and maturity gives the wine notes of greed and a beautiful salinity. Both slender and suave, this wine is seductive as hell.

Capellini with seafood, green broth and ceps. Cancale oysters au gratin with Parmesan cheese and Chablis sabayon.
