Tasting notes :
This wine displays a particularly impressive level of aromatic definition.
The nose continues to evolve in the glass, with wild strawberry, spices and mineral notes emerging after a few minutes.
The palate is full-bodied yet very refined, as are the tannins, which are already very silky.
Food and wine pairing :
Wood pigeon salmis.
Wild boar stew with Pinot and Burgundy truffles.
Ageing potential in your cellar :
25 years.
Presentation :
Located in the Côtes de Nuits vineyards, the northernmost wine-growing region of Burgundy, Charmes Chambertin is one of the Grands Crus of Chambertin.
Chambertin is a legendary hillside in this wine-growing sub-region.
The difference between it and the Chambertin AOC is minimal.
These nuances are due to the extremely varied yet closely situated climats (terroirs).

Founded in 1782, the Domaine Henri Rebourseau is one of the most serious references of the Côte de Nuits. Present on 9 appellations of Burgundy, the Domaine Henri Rebourseau is one of the most important properties in terms of surface of Grands crus own owned in Côte de Nuits.
It was in 1981 that Jean de Surrel took over the reins of the estate by setting up organic viticulture and biodynamic practices. Since 2006, no synthetic products have been used in the field. Some biodynamic practices, such as 500 and 501 preparations, as well as genodium (the art of healing life through music), are also at the heart of cultural practices that go even beyond the organic specifications with the use of suffering far less than the legislation. Today, it is the 6th generation of the family, embodied by Bénigne de Surrel and Louis de Surrel, to ensure the continuity of the estate. In 2019, the Bouygues family became the majority shareholder of the property.
The Domaine Henri Rebourseau it has been monitoring a heritage of exceptional vines planted on cultivated land for more than 1,400 years. In the heart of the Côte de Nuits, the house has the oldest plots located between the villages of Gevrey-Chambertin and Vougeot. The vineyard consists of 13.6 hectares planted in black pinot distributed under various names of Grands Crus (Chambertin, Mazis-Chambertin, Charmes-Chambertin, Clos de Vougeot), Premiers Crus (Gevrey Chambertin La Perrière and Fonteny) and two appellations Villages (Gevrey-Chambertin aux Corvées and Brunelle).
For the Domaine Henri Rebourseau, each name must be brought to its best level. There is no taste for Rollover. In each cuvée, the quality advocated is that of the climate forming the heart of the identity of the wine. Respect for this land, which has been cultivated for centuries, depends on respect for the soil and the work of former winemakers. The vineyard plots are monitored and treated daily according to a 100% organic viticulture and thanks to biodynamic techniques. On the chais side, everything is done to treat the black pinot with all the delicacy it requires. Thus, no extraction is carried out, the infusions of the berries are light and the berries are left as intact as possible before incubating.
For Jean de Surrel, the maxim of the family that « The most amazing of the wine arts is the art of aging » acts as a course of action throughout the production of the wines of Domaine Henri Rebourseau. Thus, in the estate's centenary cellars, the art of aging allows the beautification and revelation of the maximum potential that will deliver their secrets a few years later.
Pure expression of the great climates of Burgundy, the wines of Domaine Henri Rebourseau are crus with a custody potential of about 10 years for villages over 20 years old for large wines, or much more depending on vintages.
