Le Fournas, a vineyard lost in the garrigue, owes its name to a 19th century lime kiln, the rubble of which lies next to the plot.
Grape varieties:
40% carignan, 27% syrah, 23% grenache noir and 10% mourvèdre.
Tasting notes:
Dense cherry-red colour. Aromas of blackcurrant, dark leaves, prune, raspberry and redcurrant. On the palate, blackcurrant, black fruit and plum are accompanied by a beautiful freshness, smooth tannins, a minerality reminiscent of flint and a very long and aromatic finish.

Simmental fillet matured for 70 days Wellington style. Canon de biche with cocoa nibs and porcini cream.
