‘The essence of fire is “Belle Nuit”, a marriage of effervescent Grenache – made from 100% of this grape variety – and the freshness of a mountain terroir clinging to the slopes of the Montagne Noire, a land scarred by erosion, blending flint, marl and siliceous clay.
As one might expect, the harvest is carried out by hand, and the long fermentation – 18 months – takes place in vats and in bottles, so as not to mask the wine’s finesse, particularly with the wood.”
