Clarevallis
The name Clarevallis comes from the Cistercian Abbey of Clairvaux founded in 1115. Its label, created by Charline Drappier, is inspired by the Grande Bible of Clairvaux.
Ecocert certified, this Champagne comes from vines planted on the Urville hillside and partly plowed on horseback in order to preserve biodiversity.
Grape varieties:
75% pinot noir, 10% chardonnay, 10% pinot meunier, 5% true white (pinot lanc)
Tasting Notes:
Very fine and persistent bubbles. Notes of elderberry and violet. Limestone minerality rounded off by the pulp of Pinot Noir dominating the blend. A tension in the mouth balanced by a discreet dosage and pretty bitters. Nice complexity. It is a fresh and very delicate champagne.

Bright and deep sparkling white wine

Large roasted langoustine and virgin sauce. Traditional gougères.
