This cuvée has been matured for 10 years in 228 and 400 liter barrels under veil.
Sail wines are characterized by the development, after alcoholic fermentation, of yeasts forming a veil on the surface of the wine, in contact with ambient air (during its aging phase in barrels). This practice, which is not widespread for wine because of the risk of acetic puncture during storage in non-wet containers, gives it specific organoleptic characteristics (aroma of fresh walnuts and very long finish in the mouth, in particular). Among the wines matured in this way, we can mention the famous wines of Jerez in Andalusia or the classic yellow wines of Jura.

This cuvée is a rare wine of incredible complexity and length in the mouth!

Grape varieties:
80% uni white (trebbiano, 46-year-old vines), 20% grenache gris (centenary vine).

Tasting Notes:

The color is yellow, very clear and underlined with golden reflections. Bitter almond, green apple, pine cone, roasted notes dominate a very intense, almost violent and well-typed nose. The attack is straight, tense. The alcohol is present but balanced by a pronounced acidity and a marked dryness of taste despite the oxidative mark. The wine continues on the finish with notes of apple and lime, bringing a pleasant freshness.

Complex white wine that can be kept.

Food and wine pairing:

Pure iberico ham and anchovies from Collioure. Guinea fowl stuffed with chestnuts, morels and dried fruits.
