Jerez fino is a white sail wine aged in "solera" for four years on a palomino grape base. It has been classified DO (denominación de origen) since 1933. Reputed to be light, dry and not very acidic, the regulations impose an alcohol content of 15%, which makes it the lightest of the Jerez wines.
