François Douville, originally from Paris, after studying to be an agricultural engineer, started out as a consultant in viticulture and oenology in Toulouse. Then one day, he arrived in the Aspres "with a toolbox and a spade".
It was the place called Las Counques that he bought and named "Domaine Les Conques". There he found mainly old vines of grey and white grenache, macabeu and white carignan, planted 70 years ago, which at the time were destined for the production of natural sweet wines. Old black carignan, black grenache, syrah and mourvèdre complete the vineyard.
From the beginning, François converted his vines to organic farming. In his plots, he lets the natural grasses grow spontaneously, which gives the soil more porosity and life. The vines become more resistant in living soil. In addition, all his vines are surrounded by hedges, which are refuges for plant and animal biodiversity. To maintain his oldest plots, François uses Achille, his draught horse.
This great defender of clean cultivation without chemical inputs readily speaks of his love of "working with and not against the vine".
Today the Conques are 9 hectares of organic vineyards (since 2008), part of which is made up of old vines on uneven ground. So much so that the horse imposed itself where the tractor found its limits in working the soil.
Fine, fresh and balanced wines, and above all, not overpowered by the sun!
