On the occasion of the Day of the Dead (Dia de los Muertos), a popular festival in Mexico, listed as a Unesco Heritage Site, Ocho has launched its limited edition Blanco version in a black bottle.
The name "Las Aguilas" (eagles) comes from the fact that 60 years ago a Mexican eagle's nest was present near a tree in the field. This rancho is also very close to the "Rio de las Aguilas" (the river of the eagles), which also takes its name from the eagles that live in this region. "Las Aguilas" is gently sloping on a hill, starting from 2057m above sea level to 2035m at its lowest point, 100m from the river. At harvest time, the agave has just turned 6 years old but is in soil that is practically new. The fertility rate is very high and the plant grows quickly and in a very healthy way. The average weight of the pinas is 35 kgs and the sugar level reaches 30.5%.
The nose is on pepper, nutmeg, cinnamon, blackcurrant and Macadamia nuts. The palate presents aromas of crème fraîche, menthol, black pepper, white chocolate and berry tart. The finish is buttery, marked by violet and hazelnut.
