The La Jalousie cuvée is harvested at the stage where the grapes are pale yellow and crunchy. They give wines with aromas of fresh fruit. In the cellar, very few interventions, respecting the local grapes: this wine stays in vats for 12 months on fine lees sheltered from oxygen. It thus keeps its fruit and freshness. It's a "conversation" wine.
