Located in Saint-Michel de l'Attalaye, the Chelo distillery, owned by Michel Sajous, produces a clairin based on the "Cristalline" sugar cane variety.
The third edition of the Vieux Sajous, this version highlights the impressive power of a distillate transcended by an ageing in barrels that had previously contained the famous rum from Trinidad and Tobago: Caroni. Then, having reached its equilibrium point, it allows the wonderfully exotic, floral, chocolate and powdery tones of its palate to be fully expressed.



Tasting notes :

Nose: both fresh and heady. Magnificently oxidative (roasted pineapple, stewed fruit), the first nose evokes in turn a sweet Jurançon wine and a yellow Jura wine. This apparent duality hides in reality a deep connivance between these two wine styles. When aired, Clairin Sajous takes over its territory. Cane honey, cane sugar and fresh cane juice flood the entire aromatic palette. Then, some empyreumatic notes underline the influence of the ageing in Caroni casks.

Palate: unctuous, full-bodied. Remarkably fine, the attack reveals honeyed (acacia), floral (vetiver, geranium), tenderly spicy (cinnamon, nutmeg) and lemony flavours. Vegetal (sugar cane, fatty plant), the mid-palate evolves towards more vanilla and liquorice. With a very pleasant chocolate bitterness, the finish is particularly salivating and salty.

Finish: long, fluffy, powdery (cocoa, rice grain), the beginning of the finish is also exotic (banana, pineapple, persimmon). In the aftertaste, scents of iris testify to the heady character of the aftertaste. In retro-olfaction, a thin film of salted butter caramel covers the taste buds.
The empty glass is nobly spicy (saffron, cardamom) and chocolatey.
