Old Fashioned Traditional Dark - Overproof
In the age of sailing, ships turned to the wind and sailors to rum. The rum in question was rich, flavorful and strong. It was customary in the Royal Navy to test it by pouring a few drops on gunpowder. If the powder remained on, the rum was “proof”, if it exploded, it was “overproof”.
Plantation Rum Old Fashioned Traditional Dark is the successor of Dark Overproof (which is 73 °). Produced by seven great figures of spirits and modern mixology (including Master blender Alexandre Gabriel), its ambition is to be the perfect overproof for making exotic cocktails, tiki or others.
Origin: Barbados, Jamaica and Guyana
Raw material: Molasses
Fermentation: 72 hours in Barbados, 1 week in Guyana. 2 weeks in Jamaica.
Distillation: Column and Pot Still
Very dark mahogany red in color, the nose is intense with precise notes of coffee and orange jam. There is also a presence of truffles after aeration. The palate opens with the warmth of caramel, chocolate and vanilla. Finally, a spicy profile emerges on cinnamon and nutmeg. It ends with smoky accents, more on wood and dark chocolate. The finish is very long.
