The three secrets of Domaine Chiroulet are
- a ridge vineyard facing south
- the high altitude
- the whistling winds, "Chiroula", in Gascon patois
to produce ripe and healthy grapes.
Philippe Fezas produces this red wine on these limestone soils of the Ténarèze, in the heart of the Armagnac region.
Grape varieties :
Merlot 50% Cabernet Sauvignon and Cabernet Franc 30% Tannat 20%.
Aged in 225 litre Seguin Moreau Bordeaux barrels
for ¾ of the cuvée, i.e. the oldest vines and the most structured terroirs.
This is to refine the tannins and bring complexity to the bouquet.
The remaining quarter of the wine is matured in casks to preserve the fruit and elegance of the limestone terroirs.
