Aldo Viola

Aldo Viola's farm is based in Alcamo, 30km west of Palermo. The 12 hectares of the estate, including 9 hectares of vineyards, are located around Erice and Trapani, on the north-west coast.

Aldo Viola bases his work on three pillars: Excellence, Tradition and Ecology.
For Aldo, making wine is about evoking emotions and telling stories about the place where it was made.

He grows three main grape varieties for the production of his white and orange Sicilian wines: cataratto, grillo and grecanico.

For the red wines, he has Syrah vines on the Feudo Guarini hill (Trapani) at an altitude of 300m.

In the vineyard, he uses a naturalist approach to restore the fertility of the soil. Organic farming techniques combined with biodynamic concepts contribute strongly to producing wines with a strong territorial identity. The vines are strongly exposed to the wind, which facilitates the limitation of treatments.

In the cellar, Aldo Viola deploys all his talent to produce wines that are the fruit of a passion, free of any standardization. Fermentations take place naturally with indigenous yeasts and the vinification is carried out without any added or subtracted substances. There is no filtration, clarification, stabilisation or addition of sulphites in almost all the wines. Aldo's art lies in his mastery of long maceration, without pressing. This method limits the oxidation of the wine and avoids the overly extracted side of some orange wines, a wine that has its detractors. The grapes are crushed under their own weight and only 40% of the juice is kept.
