This cuvée comes from vines on a red sandy soil. It is named "Krimiso" after the divinity of a thermal river in the province of Trapani.
After de-stemming, the grapes macerate for five months in stainless steel tanks, after which only the free-run juice is used. The wine is not stabilised, filtered or fined.

This white maceration wine (orange wine) is bluffing: we find citrus, candied fruit and white flower notes on the nose. The palate is fresh, seductive, combining sensuality and vivacity, with a slightly saline finish. The fine bitterness brings length and character.

Smoked eel fillet with artichokes and fresh almonds. Risotto Milanese (with saffron) and Pantelleria capers.
