Tasting Notes:

The color offers a medium deep ruby hue. The nose evokes the cherry then the spices, the fruit well melted in a nice woody note which brings a surplus of complexity. The mouth is cut in half-body in a very fine and savory velvety. The tannins are quite elegant and the mineral chalky finish.

Estouffade de Perdrix with wild mushrooms, like the monks of Cluny. Doe stew with chestnuts and carrots cooked in a broth of sweet spices.
