de Christophe Comes
France - Languedoc
Laetitia and Laurent Gaspard choose fragrant, healthy fruits at their optimum maturity. They refuse to accept under- or over-ripe fruit and only distil what they would like to eat. A simple rule, but one that involves examination of each fruit.
This Citrus Gin is a combination of juniper berries, fresh peppers including the famous Sichuan and Timut peppers and various carefully chosen citrus fruits (citrons, yuzus, bigarades, kumquat) from the garden of Christophe Comes (Michelin starred chef in Perpignan).
This gin is made in a 300 litre still heated over an open fire. Here, we go and look for very rare aromas. It is truly the citrus gin par excellence! The fact that this gin comes from a fruit water distillery can be felt in the mouth with its sublimated citrus aromas.
Pure and complex nose, with notes of fresh juniper and coriander. Spicy, ample and persistent mouth, with citrus and pepper notes.
