Presentation :
The Gorka Izaguirre winery is a project that began in the 1990s with the union of several producers with the aim of creating a winery capable of producing high-quality wines.
In 2005, Eneko and his uncle Gorka, owners of the Michelin-starred restaurant Azurmendi, conceived the project to revitalize the region's wine and gastronomy, and began developing it at its current location in Larrabetzu.
Currently, they work with 25 winegrowers across 40 hectares, spread across six municipalities in Biscay.
The grapes are harvested manually in 15 kg crates.
Once bottled, and following 36 hours of static settling at 10°C in an inert atmosphere, the purest portion of the must is separated for fermentation at 14°C in stainless steel tanks.
Each grape variety and each plot is vinified separately.
50% Courbu Blanc (Hondarribi Zuri), 50% Petit Courbu (Hondarribi Zerratia).
The wine is aged on its lees for two and a half months in stainless steel tanks.
