Txacolí de Bizkaia DO
Espagne - Pays Basque
The Gorka Izaguirre winery is a project that was born in the 90's with the union of several producers with the aim of providing a winery with excellent production, in order to elaborate high quality wines. In 2005, the owners of the restaurant Azurmendi, Eneko and his uncle Gorka, conceived the project to revitalise the region in terms of wine and gastronomy, and they began to develop the project in the current location of Larrabetzu. At present, 40 hectares are being worked by 25 winegrowers, spread over 6 Biscayan municipalities.
The grapes are harvested by hand in 15 kg crates. Once bottled, and following a 36-hour static settling at 10°C and an inert atmosphere, the purest part of the must is separated to ferment at 14°C in stainless steel tanks. Each grape variety and plot is vinified separately. The wine is aged on the lees for 2.5 months in stainless steel tanks.
