Katori 90 is a 100% organic, purely handcrafted sake from Terada Honke, founded in the 17th century. The different rice varieties used are koshi-hikari and akita-komachi. The rice grains are only 10% polished (semibuai 90%). One would expect a strong cereal flavour, but instead, it is shy, as the aromatic palette of this sake is rich and complex.
Tasting notes :
Slightly coloured and slightly cloudy. Fresh, mineral. Fruity (mandarin, melon, grape), milky, herbaceous (straw, sage, oregano) and iodine notes. Presence of anise, flowers and black olives. Rich and complex aromatic palette. Superb!
Drink warm, chilled or at room temperature
Food and wine pairing:
Tuna and eel sushi declination. Wok of salmon and prawns, spicy rice and coriander flower.
