Domaine de L'Hermas

The name "L’Hermas" comes from Occitan and means "abandoned land.

Matthieu Torquebiau chose to cultivate these fallow lands, located at an altitude of 250 meters on a north-facing limestone plateau.
This site offers a cool microclimate, ideal for growing vines.

The grape varieties cultivated include Syrah, Mourvèdre, Grenache, Vermentino, Roussanne, and Chenin Blanc.
The vines are cultivated by hand, with low goblet pruning and trellising, and treatments are carried out using sulfur and copper.

Winemaking is done naturally, without the addition of yeasts or enzymes, encouraging spontaneous fermentation.
The wines are aged for 12 to 24 months in 700-liter demi-muids (600-liter barrels), without filtration, in order to preserve their vibrant and authentic character.

This minimalist approach aims to fully express the unique terroir of the Terrasses du Larzac.
