The PUNI distillery was founded in 2010 in Alto Adige, the Italian Alps. The family business uses pure mountain water and the cereals are grown locally, especially rye (renowned in the region), part of which is farmed at an altitude of 1,500 metres.
Puni Sole was matured for two years in first-fill Bourbon casks and then finished maturing for a further two years in Spanish Pedro Ximénez Jerez casks which were aged using the solera system. The name of this whisky honours this Pedro Ximénez cask finish as 'Sole' means 'sun' in Italian and reflects this crucial element of Jerez Pedro Ximénez making.
Tasting note:
Non-peated.
Nose: Fruity and honeyed: heather, sweet spices and blood orange.
Palate: Creamy. Fruity aromas: apples, plums and citrus fruits.
Finish: Long and persistent.
