The brilliant Luca Gargano, through his distribution company Vélier, was the first ambassador of this Haitian brandy made from pure cane juice, for which he fell in love! Since then, he has been spreading the word about this very special know-how well beyond Haiti's borders. Clairin is made from pure sugar cane juice, like traditional French agricultural rum.
This Sonson clairin comes from the village of Cabaret, a commune located in the Arcahaie district to the north-west of Port au Prince. The sugar cane, of the local variety Madame Meuze, is grown on 25 hectares, mixing banana trees and other fruit trees.
Once harvested, the cane is pressed, then the juice is slowly reduced to obtain a syrup. The latter is then fermented spontaneously with the help of natural yeasts. The resulting clairin is bottled without reduction.
Nose: Fresh and herbaceous. Cut grass, notes of basil and lemongrass.
Palate: Clean and fruity. Fresh cane juice, liquorice.
Finish: Pleasant and slightly spicy. Sweet pepper and ginger.
