Aged for equal periods under "flor" (veil) and in contact with oxygen, at the Bodega Emperatriz Eugenia in Jerez de la Frontera, this dry amontillado acquires an authentic, rich, nutty flavour over the years of ageing (average age 8 years).
There were two arches (los arcos) at the entrance to the winery in the Plaza del Cubo, where this amontillado was aged. Each was dedicated to one of the wives of Emilio Lustau's sons: Arco de Zuri (for the wife of Emilio Lustau Ruiz-Berdejo) and Trini (wife of José Luis Lustau Ruiz-Berdejo)
