The most important thing is to find a good mustard to brush onto a slice of monkfish with sesame seeds. Absolutely delicious with this Spanish wine.

Autòcton Celler is a winery located in La Bisbal del Penedès, Catalonia, founded by winemaker Albert Jané. Based on the family estate of Mas Vilella, a 16th-century farmhouse, the project was born out of a desire to preserve and promote the indigenous Catalan grape varieties that have shaped the region’s winemaking history.
The name ‘Autòcton’ means ‘native’ in Catalan and perfectly reflects the estate’s philosophy: to restore traditional varieties such as Sumoll, Xarel·lo, Xarel·lo Vermell and Malvasia de Sitges to their rightful place. These old vines are grown on poor, clay-limestone and stony soils in the Baix Penedès and Alt Camp regions, where they naturally produce low yields, promoting concentration and the expression of the terroir.
Committed to environmentally friendly viticulture, Autòcton Celler practises organic farming and favours hand-harvesting as well as minimal intervention in the cellar. The wines are aged in large French oak barrels, amphorae or stainless steel vats to preserve the purity of the fruit and the identity of the grape varieties.
Among the estate’s signature wines are Autòcton Blanc, made from Xarel·lo, as well as Autòcton Negre and Gran Autòcton Negre, produced mainly from the Sumoll grape variety. These wines are renowned for their freshness, elegance and faithful expression of Catalonia’s wine-growing heritage.
