Curiously linked to the vineyards of the Loire Valley, the Côtes d´auvergne PDO is moving upmarket in the wake of passionate winegrowers who work this volcanic soil. Among them, Pierre Goigoux, whose 17 hectare estate produces fine and elegant wines with strong character.

This clear and limpid Pinot opens with an intensely fruity nose. Prune and black cherry compete for first place, ahead of leather notes that give the wine a very subtle animal side. The palate is full, with a nice finish that comes back to spices.

Thrush on a string, reduced juice with black olives and green lentils from Puy. Veal entrecote and roasted beetroot in a salt crust.
