Located in Saint-Michel de l’Attalaye, the Chelo distillery, owned by Michel Sajous, produces a clairin made from the ‘Cristalline’ variety of sugar cane.
Tasting notes :
Nose: both fresh and heady. Beautifully oxidative (roasted pineapple, stewed fruit), the initial nose evokes in turn a sweet Jurançon wine and a Vin Jaune from the Jura. This apparent duality actually conceals a deep affinity between these two styles of wine. Once aerated, the Sajous Clairin reasserts its character. Cane honey, cane sugar and fresh cane juice completely flood the aromatic palette. Then, a few smoky notes highlight the influence of ageing.
Palate: creamy, full-bodied. Remarkably refined, the attack reveals honeyed (acacia), floral (vetiver, geranium), delicately spiced (cinnamon, nutmeg) and citrus flavours. With vegetal notes (sugar cane, succulent plants), the mid-palate evolves towards more vanilla and liquorice-like notes.
Finish: long, velvety, powdery (cocoa, rice grain); the opening of the finish is also exotic (banana, pineapple, persimmon).
The empty glass has a noble, spicy aroma (saffron, cardamom).
Food and Rum Pairings :
This Clairin pairs wonderfully with cod fritters as a starter, spicy dishes or even an exotic fruit salad for dessert.
