The altitude, the rocky schist soils and the diversity of the Mediterranean grape varieties of Faugères persuaded Simon Coulshaw to settle with his wife Monica at the Domaine des Trinités to make true terroir wines.
Simon has chosen to work his soils organically, some plots biodynamically, and not to add any inputs to his wines except a little sulphur to avoid certain deviations. Some vintages do not receive any at all. From low yields, his wines are juicy, full, pure, precise, balanced and elegant.

100% Roussanne

Tasting notes:

The Roussanne grape is adapted to the rugged schist soils and altitude of the Languedoc hinterland and produces a maceration wine with beautiful aromas of green apple, olives and herbs. Prolonged contact with the skin gives a richness of white-fleshed fruit aromas and notes of ginger that mingle in the mouth. Marked by a lovely lemony acidity, this is a wine that has the ability to become more complex with age.

Dry white wine from maceration.

Food and wine pairing :

Salt-crusted turbot, fresh spinach and crunchy hazelnuts. Green curry of monkfish tails with coconut milk.
