A sure bet in the Côtes-du-Rhône, this area (60 ha) is commanded by an old fortress from the 11th century. camped on a rocky promontory, lookout on the Rhône, a river which marked the border between the kingdom of France and the Holy Roman Empire. In the 18th century, the ancestors of Rodolphe de Pins (installed in 1995 after various experiences in France and abroad) took possession of the premises. The vineyard is characterized by very diverse soils and grape varieties.

Grenache noir, cinsault, syrah and carignan.
Tasting Notes:

No less than five grape varieties, with Grenache Noir in the lead, make up this cuvée, harvested by hand and aged for twelve months in barrels. A wine with a dark color and a very open nose on red fruit, nuanced by subtle vegetal notes. Its round attack, its fine and velvety tannins and its elegant finish leave the memory of a very balanced wine.

Food and wine pairing:

Rack of lamb from the Cathar country in an olive crust, sautéed potatoes, thyme and rosemary. Fillet of doe, cocoa sauce, crushed parsnip.
