The Ayunta de Filippo Mangione vineyard is made up of several plots spread over the upper terroirs of Etna (contrada de Calderara and Sottana) around Randazzo, totaling 2.8 ha. The vineyard is mainly planted with very old vines, many of which are centuries old. Each vine is different, which is why Filippo does all its cultivation by hand. He does not use any chemicals in his vines, preferring to let the natural vitality of the soil show through in the wines. The yields are quite low and due to the altitude (600-700 meters), the harvest is late with the whites at the beginning of October and the reds at the end of October. In the cellar, Filippo makes the wines in a very traditional way. The reds ferment spontaneously in an open concrete vat for about 3 weeks before being pressed into large, mostly neutral barrels. Filippo's goal is to best transcribe the complexity and freshness of this extraordinary volcanic terroir!

This style of Etna wine was known as "pista e'mmutta" (meaning: squeeze and put it right away) and this spirit, unpretentious and of course natural, can be felt. in this bottle. The result is magnificent: punchy red fruits at first, then part of the volcanic landscape comes through its smoky minerality. It is very fine and expressive with a beautiful tannic structure. Compact raspberry and cherry fruit with good persistence and fine fine tannins. Medium-bodied and structured, tending towards elegance.
