Alvaro Espinoza and his wife Marina founded Antiyal in 1996, in the Maipo Valley, with the aim of teaching their children and grandchildren respect for the land and the cultivation of the vine. Antiyal, which means "Sons of the Sun" in Mapuche (Chilean aboriginal people), was originally a vineyard of only 3 ha. In 1998, after a modest development, the estate produced 3,000 bottles.
The wines are made with respect for tradition and a holistic view of people and the land. Alvaro Espinoza maintains a biodynamic agriculture, always thinking of the future generations who will perpetuate his know-how and inherit a healthy land. Today, the estate has grown a little and produces 3 wines (21,000 bottles).
The work is artisanal at all stages of the wine making process.
Grape varieties :
54% syrah, 22% Cabernet Sauvignon, 17% carmenère and 6% petit verdot.
Vinification: Hand-picked, indigenous yeasts. Destemming, fermentation in small stainless steel vats. Maceration for 25 days.
Ageing: 12 months in French barrels. 20% new, 40% one wine, 40% two wines. Plus 6 months in bottle.
Tasting notes :
Dark ruby colour. Aromas of red and black fruits, black cherry, blackberry, blueberry and blackcurrant. On the palate, the fruit is juicy and greedy with spicy and chocolate nuances. The wine is dense and fleshy and well structured with nice tannins and volume on the palate

Roast guinea fowl with Agen prunes, purple carrots and turnips with honey. Iberian pig's breast grilled over a wood fire, peas and bacon emulsion.
