In his 30 years in the business, Benoît Dorsaz has carved out his own path in the Swiss wine landscape.
In contrast to the over-the-top, high-performance standards, his wines reflect what he loves: clarity, elegance, and precision.
Born into a family of winemakers, Benoît Dorsaz grew up among the vines.
In 1986, Benoît inherited a plot of Chasselas.
From then on, he leased his family's vineyards and undertook the replanting of the vines, as well as the renovation and expansion of his father's cellar.
Little by little, the estate was enlarged to ensure efficient and artisanal production. Each plot is carefully tended, and the vines flourish in a setting that the winemaker respectfully shapes.
The winemaker is attuned to his terroir.
In the cellar, the same philosophy allows the wines to express the unique characteristics of each vintage and the particular terroir of Fully, where two mountain ranges overlap.
Grape variety : 100% Petite Arvine
Terroir: Commune of Fully. Domaine Les Perches = loess (rock flour resulting from erosion) on gneiss and some moraines.
At the foot of these vines lies a 10-meter-high gneiss outcrop, a remnant of the crystalline massif of the Aiguilles Rouges.
Harvest characteristics: Hand-harvested between September 15th and 18th. Very few "curdled" berries.
Winemaking and aging: Destemming and skin maceration, very gentle pressing.
Indigenous yeasts.
Slow fermentation in barrels (65% of the total).
Aged in barrels for 12 months. No new oak. One-third of the wine was not aged in oak and was vinified in stainless steel tanks.
After 12 months, the two fractions are blended and continue aging in tanks for an additional 6 months.
Aging Petite Arvine in barrels is a delicate process but imparts vinosity and complexity.
This winemaking approach aligns with the pursuit of highly expressive wines that transcend the mere expression of the grape variety.
